Can someone explain how it is August 24?! I swear, this year and especially this summer has just flown by, more so than other years! Crazy to think next weekend is Labor Day and the beginning of college football season (who’s excited?!)
Since summer days are getting fewer and fewer, I’m taking every opportunity to make summer dishes. Before I know it, we’ll be knee deep in chilis and soups and casseroles. So the other week, I had some leftover rotisserie chicken and found a recipe from MyRecipes for chicken, farro, and vegetable salad with a lemon vinaigrette. It sounded so refreshing and delicious and a perfect summer dish.
