A couple weeks ago, I wanted an easy, quick snack that wasn’t terribly bad for me and would give me energy. So I was super excited when I came across these no-bake energy bites on Real Food, Whole Life. I’ve featured Robyn’s chicken salad before, and as that was delicious, so are these energy bites.
I love them because one batch makes about 30, and I can grab a couple if I’m running late and don’t have time for breakfast, or I can eat in the afternoon if I’m getting hungry. I don’t know about you, but around 2:00 I always hit a slump and need an energy boost! It’s also the worst when I’m starving right at 5:00, so one of these bites is a perfect way to tide me over.
So good, so easy. I can literally whip these up in 10 minutes – in the fridge and everything.
1 1/2 cup rolled oats (not instant!)
1/2 cup unsweetened coconut flakes
1/2 cup flax seed
1/2 cup sunflower butter (or whatever butter you prefer)
1/4 cup honey
1/4 cup coconut oil, melted
1/4 tsp salt
1 tsp vanilla extract
handful of chocolate chips
Mix oats, coconut flakes, flax, and salt together. Add sunflower butter, honey, coconut oil, and vanilla and mix until evenly combined. If the mix appears to be falling apart easily, add a little more honey or sunflower butter. Sprinkle in chocolate chips and scoop onto a cookie sheet with a small cookie dough scoop. Refrigerate for an hour.
